Lima Beans

Arm & Hammer Baking Soda. When soaking dry lima beans, add a pinch of Arm & Hammer Baking Soda to the water to shorten the soaking time. Discard the soaking water before cooking.

Campbell’s Chicken Broth. To give lima beans a wonderful flavor, steam them in Campbell’s Chicken Broth.

A HILL OF BEANS

One pound of fresh lima beans yields 1¼ cups shelled lima beans, which, in turn, yields two servings.

To shell fresh lima beans, use a pair of scissors to cut a thin slice along the inner edge of the pod and remove the beans.

To add a zesty flavor to fresh lima beans, place a whole onion in the pan while cooking, and when finished, add salt and butter.
